Since 2006, Mauritius is home to one of the most famous and original culinary festival, the Bernard Loiseau Culinary Festival. This event has always been organised by one of the leading luxury hotel groups in the Indian Ocean, Constance Hotels Experience Group. The Constance Group, who has hotels in Mauritius, Seychelles and Madagascar, is highly renowned for its “Culinary Spirit philosophy” using fresh, top-quality produce to create a sophisticated, international cuisine. Working together as a team to create culinary delights for the pleasure of the guests has always been a priority for the Food & Beverage departments of Constance Hotels Experience Group.

Everything seems to be almost ready for the 8th edition of this festival, which will take place at Constance Belle Mare Plage in Mauritius from the 18th to the 26th of March 2013. This year, the participants include six pre-selected chefs from the islands of the Indian Ocean (Mauritius, Maldives, Seychelles, Madagascar, Sri Lanka…), and six of Europe’s very best chefs who all hold one Michelin star.

The challenge to all of them is to create an award-winning menu from local produce and to achieve this, they will work together as pairs to exchange their experiences and knowledge. The main aim is to create a fusion together in the cuisine and in the teamwork with the “master” and the “apprentice”. The Michelin Star Chef will be able to share his techniques and food knowledge and the Indian Ocean Chef will share his passion for local products.

The last day of the competition (Thursday), after three days of ingredient selection, creation, experimentation and finalisation as a team, the “Island Chef” is left alone to recreate the award-winning menu the pair had been working on and is being judged by some of the most talented chefs on the planet like Patrick Berton (3 Michelin Star-holder) and Eyvind Hellstrom (2 Michelin Star-holder).

For guests at both Constance Belle Mare Plage and Constance Le Prince Maurice, this will mean a rare opportunity to sample food prepared by some of the world’s leading chefs all together in one location. They will be able to get involved throughout the week with cooking demonstrations (at the Citronnelle Restaurant, Belle Mare Plage, 22 March), special menus created by the visiting chefs throughout their stay (20 March, Chef Berton and 18 March, Chef Hellstrom) and the thrilling prize-giving ceremony at the Deer Hunter Restaurant, Belle Mare Plage on the 23rd March.
